Fresh Spinach and Tortellini Soup

If you’re planning to serve this hearty soup for dinner, get ready to dish out seconds.  This delicious soup is prepared using our fresh spinach leaves that not only serve as a tasty, nutritious addition, but also provide a burst of color that, along with the tomatoes, is hard to beat.  This recipe yields enough for seconds and thirds, and can be prepared in a flash!

 

Ingredients

1 T butter or margarine
5 cloves garlic, crushed
1 (49 ½ oz.) can + 1 (14 ½ oz.) can low sodium, low-fat chicken broth
4 cups water
1- 9 oz. package frozen cheese tortellini*
1- 9 oz. package frozen meat tortellini*
2 tsp. celery salt (or to taste)
½ tsp. pepper (or to taste)
1 T dried basil
3- 14 oz. cans no-sodium stewed tomatoes, chopped
1- 10 oz. package Topless Salad Quickies™ Gourmet Baby Spinach**

 

Freshly grated Parmesan cheese
Cheese and garlic-flavored croutons

 

Directions

Melt butter in a large soup pot over low heat.  Add garlic and sauté until fragrant; about 2 minutes.  Add chicken broth, water and frozen tortellini; bring to a boil over high heat.  Reduce heat and season with celery salt, pepper and basil; simmer until tortellini is just tender, about 10 minutes.  Stir in stewed tomatoes and spinach; simmer about 5 minutes more.

To serve, ladle soup into individual soup bowls.  Sprinkle with Parmesan cheese and top with croutons.  Serve with crusty French or sourdough bread.  Enjoy!

 

*   Packages will range from 9 to 12 ounces in various stores.  Any type of tortellini may be used.
** Salad Quickies™  Spinach may be substituted for our Gourmet Baby Spinach if a larger leaf is desired.
