Frank’s Favorite Garden Salad with Balsamic Vinaigrette

All the favorites in one great salad!  The balsamic vinegar adds just enough character to this light, delicious dressing; not too overpowering for the delicate greens.  Our secret for enhancing the sweetness of the onions will be one you’ll want to keep all to yourself.

 

 

Dressing

¼ cup balsamic vinegar
1 envelope Good Season’s Italian Salad Dressing mix
2 tsp. granulated sugar
½ cup olive oil

 

 

Ingredients

1 red onion, thinly sliced
Salt
1-6 oz. package Topless Salad Quickies Spring Mix
1-18 oz. package Topless Salad Quickies™ Romaine Hearts
6 Roma tomatoes, chopped
2 avocados, chopped
1 cup bleu cheese crumbles

 

 

Directions

To prepare the vinaigrette, combine the vinegar, contents of envelope, sugar and the olive oil in a jar.  Close the lid and shake vigorously until ingredients are well combined.  Refrigerate if not using right away.  Spread red onion slices onto a paper towel, sprinkle lightly with salt and set aside while preparing salad.  Lightly rinse Spring Mix in a colander to refresh; shake to remove excess water and place into a large salad bowl.  Remove core at the end of each Romaine Heart.  Lightly rinse each leaf, pat or spin dry and tear into bite-size pieces; add to Spring Mix.  Add red onion, tomatoes and avocado to salad greens.  Pour over enough dressing to coat; toss well.  Top each individual serving with bleu cheese crumbles and serve with warm sourdough bread.  Yields about 8 generous servings.
